Abstract
In this study, a casein (CAS)-based dual-mode smart film was developed by incorporating pyridine-modified black soybean seed coat anthocyanins (mBSSC) and ZIF-67 for real-time freshness monitoring and preservation of chilled mutton. The mBSSC/ZIF-67 hybrid was uniformly dispersed within the CAS matrix, producing a compact structure with good integrity and satisfactory mechanical performance. Among the formulations, CAS/mBSSC/Z2 provided the best balance between functional performance and material economy. Compared with neat CAS, mBSSC/ZIF-67 reduced water vapor permeability from 12.4 × 10−11 to 6.2 × 10−11 (g·m−1s−1m2·Pa−1) while improving water resistance, antioxidant capacity, and antibacterial activity. During refrigerated storage, the optimized film enabled dual-mode monitoring through visible color evolution under ambient light and fluorescence activation under 365 nm ultraviolet (UV) irradiation, with fluorescence “turn-on” occurring at approximately Day 6. The colorimetric mode enables convenient routine observation, whereas the high-contrast fluorescence mode facilitates detection in low-light or dark environments and can provide rapid confirmatory screening using a portable UV source. CAS/mBSSC/Z2 also retarded mutton spoilage, delaying time required for total volatile basic nitrogen (TVB-N) to reach 15 mg/100 g until approximately Day 10 and limiting the final microbial load to 8.8 log CFU/g, compared with 12.6 log CFU/g in the Z1 group. Furthermore, the films showed substantial disintegration and mass loss under the tested soil-burial and seawater conditions. These findings identify the film as a multifunctional platform integrating barrier enhancement, preservation, and complementary colorimetric-fluorescence sensing.
