Abstract
Dulse, an underutilized resource in southern Hokkaido, contains relatively high levels of ultraviolet (UV)-absorbing compounds, specifically mycosporine-like amino acids (MAAs), compared with other red algae. This study investigated the MAA content of dulse harvested from Usujiri and Oyasu, two regions in southern Hokkaido with distinct marine environments, from January to June 2023. Extracts containing MAAs (ECM) were prepared from fine dry powder using 25% ethanol. The MAA content of the ECM was quantified using high-performance liquid chromatography at 330 nm absorption. The MAA content peaked in the ECM from Usujiri in February and subsequently declined. In contrast, the MAA content in the ECM from Oyasu increased steadily from January to April. Phycoerythrin content in both ECMs followed trends similar to the MAA content. The MAA levels in red algae were influenced by UV radiation (UVR) and marine nutrients. In Usujiri, nutrient concentrations declined due to diatom proliferation from February onward, leading to a reduction in the MAA content of dulse. This diatom proliferation was not observed in Oyasu, where the increase in MAA content until April appeared to be driven by rising UVR levels. Although the ECM demonstrated antioxidant activity, these values were not correlated with the MAA content.
