北海道大学農学研究院の鈴木卓特任教授らの研究チームは、定量的質量分析イメージング(MALDI-TOF q-MSI)技術を用いて、イチゴ果実内の成分濃度分布を可視化することに成功しました。この手法により、異なるイチゴ品種間での糖や酸などの味に関与する成分の分布を詳細に比較することが可能となり、果実の味の違いを科学的に解明する道が開かれました。本研究は、果実の品質評価や品種改良における新たな指標としての活用が期待されており、農業や食品産業への応用が見込まれます。研究成果は北海道大学の公式ウェブサイトと「sciencedirect」で発表されました。

Abstract

Detailed quantitative histochemical distribution of the components in fruits has not yet been clarified. To verify the availability of using the serial section method of matrix-assisted laser desorption/ionization time-of-flight quantitative mass spectrometry imaging (MALDI-TOF q-MSI) in evaluating fruit qualities, the distributions of soluble carbohydrates, organic acids and ascorbic acid in the fruits of 6 strawberry cultivars were examined. Simultaneous analysis of the compounds was successfully achieved by applying 1,5-diaminonaphthalene as a matrix. Quantitative digital images showing the distribution of each compound were created, along with a virtual image of soluble carbohydrates and organic acids as an index of taste. It was confirmed that the concentration of citric acid was lower (P < 0.05), but that of hexose was higher (P < 0.10) in the pith than those in the cortex regardless of the cultivar. Mean values and standard deviations clearly showed varietal differences in component distribution, which would be useful for evaluating fruit quality.
